RVA by Stirring Number Analysis

Rapid Visco Analysis (RVA) is a fast and reliable indicator of pre-harvest sprouting in unmalted grains because alpha-amylase is produced in the field during pre-germination and the effects of alpha-amylase on mash viscosity are measurable.

Germinative energy and germinative capacity tests, and visual evaluation of harvested kernels often fail to detect pre-germination damage. RVA testing is a more sensitive method and is used to identify pre-germination before loss of viability is discovered during storage.
