Premium® Fructo is a fructophilic strain of S. bayanus used by winemakers to handle difficult fermentation, which makes it a good choice for seltzer production from sugar substrates. Tolerant of high alcohol content and different temperature ranges and pH levels. 

Dose:

  • High Alcohol fermentations = 20-30 g/hL
  • Stuck fermentations = 50-100 g/hL
