Kerry Bioferm™ LC Alpha Amylase 1 kg

Bioferm™ LC is a liquid fungal alpha amylase derived from a selected strain of Aspergillus oryzae.

SKU: BZZZ1748

Alpha amylase hydrolyses the alpha 1,4 glycosidic linkages in amylose and amylopectin, resulting in the production of dextrins and fermentable sugars. It is particularly useful when aiming for the driest styles that still contain limit dextrins with alpha 1,6 bonds. Brewers seeking complete amylopectin degradation should select Amylo 300.

Key Benefits

  • Improve wort fermentability
  • Produce more maltose in high-adjunct brewing
  • Eliminate starch hazes
  • Improve beer filtration

Application
Bioferm LC can be dosed directly into the mash during conversion to make your wort more fermentable.

Alternatively, Bioferm LC can be added during fermentation to further increase fermentability and reduce the potential of starch hazes. Should you pursue this method, pasteurization will ensure deactivation of Bioferm LC.

Optimal Temperature and pH
Bioferm LC (25Kg) works optimally at 50°C and in pH ranges of 4.5 – 5.5.

Dosage Rate
For mashing application: Bioferm LC can be dosed at 150-1500g/tonne of grist.

For Fermentation/Maturation application: Bioferm LC can be dosed at 0.7 to 3 g per hL or 0.85 ml to 3.6 ml/hL.
