Citric acid is added to address a variety of issues in white wines e.g. improve diacetyl content, reduce ‘browning’, or clear ferric haze. Its concentration in wine is regulated in some markets. The Citric Acid Assay Kit has reaction time of 5 minutes. Each kit contains reagents for 72 tests using a standard manual spectrophotometer, 144 tests using the MegaQuant™ Wave, 720 tests using a microplate reader or 840 tests using an auto-analyzer. All reagents are stable for >2 years.
